Guys,

I have the off road rims which are 7.5" width. I notice there are very few tires (BF TA KO, the stockers) that are recommended for that width. Most of the cool tires (Micky Thompson, Nitto, Toyo, Pro Comp, etc) say 8.0" minimum.

What happens if you put these on the 7.5" factory rim?

Not much will happen. They will be slightly taller than with the wider wheels though.

Anyone else care to chime in here?

Nothing. If you find a tire approved for an 8" rim you should be able to get away with mounting them on a 7.5" rim. I have a set of 20X8.5" rims coming in the mail right now with 305/55/20 tires. The tires are only approved by the manufacturer down to a 9.0" wide wheel but my 8.5" rims will do fine as I have seen many mounted this way. BTW, I just got back from my local Nissan dealership where I was browsing the lot and noticed an Armada with 20X8" rims with 325/50/20's mounted on them. It looked like way to much tire for the rim but apparently they work. Bottom line, stretching 1/2 inch should be no problem.
